Soba Noodle Salad With Prawns
A nourishing and satisfying noodle salad with takes less than 15 minutes to cook.
- 200 g prawns (raw and peeled )
- 1/2 packet soba noodles
- 1/2 cup frozen edamame beans (defrosted )
- 1 cucumber
- 1/4 cup pickled ginger (thinly sliced )
- 2 tbsp sesame seeds (toasted )
- salt, pepper, olive oil
Ginger + Wasabi Dressing
- 2 tbsp light soy sauce
- 1 clove garlic (minced )
- 1 knob ginger (minced )
- 2 tbsp rice wine vinegar
- 1 tsp sugar
- 1 tbsp wasabi paste

Combine all dressing ingredients into a small jar and shake until combined. Set aside.
Soba noodle salad

Fill a saucepan with water and bring to a boil over medium heat.

Add soba noodles to boiling water and cook until tender. Drain and rinse with cold water to stop them sticking together.

Heat a frying pan over medium heat. Season prawns with salt and pepper, drizzle with olive oil and grill on each side for 2 minutes or until cooked through

Combine the soba noodles, edamame, cucumber, and pickled ginger in a bowl. Coat with dressing and mix until thoroughly coated.

Divide salad onto two plates, top with crisp, golden prawns and sprinkle with sesame seeds
